I'm all smiles this entire weekend..




I spent it with some of the people I love the most on their birthdays. Seeing them being so happy being with me makes me the happiest person on earth right now . Apparently one of my friends told me that she hasn't seen me this happy for a while now, which was nice to hear because I do feel fantastic nowadays.

I thanked GOD that they absolutely adored the cakes I've made for them! I decided on making the same cake for both people - a battenberg cake! Basically, it's checkered on the inside with 2 different colours, and wrapped in either marzipan or fondant. I used strawberry gelatin to flavour and colour one part of the cake and the other part is just with a bit of vanilla (nothing too overpowering in taste). I used Nutella chocolate spread to glue the piece together, and wrapped it with homemade white marshmallow fondant, since it's much better in taste compared to normal fondant (and I prefer fondant over marzipan any day). Something I would definitely try in the future with this recipe is to separate the eggs first to whip the egg whites and fold it into the two batters to make a lighter consistency in the actual cake itself. I would also probably try rolling the fondant out thinner than I had done because I prefer my cakes to be not as sweet and dense.

Tomorrow, I'm heading to go see the Dark Knight Rises!


And on all of Saturday, I'll be going to see our annual fireworks celebration downtown at the beach! I hate crowds but.. I kind of have to be there since it'll probably be the last time I see one of my friends before she goes to do a student exchange for an entire school year.. >"<




I'm basically finished all my school homework, so there's only those three final exams to write on August 7th and 10th. I'll be sure to start studying soon (I hope)! Wish me luck .

Now, if you'll excuse me... I have to go do laundry........ or procrastinate some more on youtube ..
